Moringa oleifera Lamarck est une plante cultivée dans de nombreux pays tropicaux, qui a de nombreuses utilisations populaires en raison de ses applications nutritionnelles et pharmacologiques. Cette plante est originaire du nord de l'Inde et appartient à la famille des Moringaceae. Elle a la particularité de s'adapter aux sols pauvres en nutriments et aux climats arides. Ses graines ont une importance industrielle car elles produisent une huile utilisée pour lubrifier les montres et autres machines délicates. Elle est également utilisée dans la fabrication de parfums et dans le traitement chimique de l'eau. Une option intéressante pour analyser la possibilité d'utiliser l'huile de la graine dans l'alimentation humaine est de la placer à la base de l'une des sauces les plus consommées au monde: la mayonnaise. Dans ce travail, l'huile de moringa a été utilisée pour produire une mayonnaise maison, en remplacement des huiles conventionnelles. Des analyses physicochimiques de la mayonnaise à base d'huile de moringa ont été effectuées, en la comparant à la mayonnaise à base d'huile de soja et de tournesol, ainsi que la caractérisation de l'huile par l'analyse LR-NMR. Des recherches plus approfondies sont nécessaires dans ce domaine, qui pourrait constituer un nouveau produit à introduire sur le marché.
