Erziehung, Note: 1,0, Pädagogische Hochschule Freiburg im Breisgau (Institut für Erziehungswissenschaft II - Sozialpädagogik), Sprache: Deutsch, Abstract: Die vorliegende Arbeit besteht aus fünf Kapiteln. Kapitel 2 "Einführung in das Forschungsprojekt WIBEOR" enthält grundlegende Informationen über Entstehung, Inhalt und Implementierung des Orientierungsplans für baden - württembergische Kindergärten, sowie eine kurze Beschreibung des Forschungsprojekts der Pädagogischen Hochschulen. In Kapitel 3 wird der thematische Schwerpunkt dieser Arbeit behandelt: "Ernährungserziehung in Kindertageseinrichtungen".. Im ersten Abschnitt des Kapitels werden durch verschiedene Studien aktuelle Problemlagen und Ansatzpunkte thematisiert, anhand derer Bedeutung und Ziele der Ernährungserziehung aufgezeigt werden können. Des Weiteren wird auf die Rolle der Ernährungserziehung im Orientierungsplan eingegangen. Der zweite Teil des Kapitels stellt eine Einführung in die Ernährungslehre dar: Hier werden Nährstoffe und Nährstoffgruppen des Ernährungskreises, sowie das Konzept der "optimierten Mischkost" kurz vorgestellt. Dabei wird auch die tatsächliche Versorgung der Kinder mit diesen Nährstoffen und Nährstoffgruppen thematisiert und die Umsetzung der "optimierten Mischkost" in Kindertageseinrichtungen behandelt. Dies geschieht im Rückgriff auf quantitativ-empirische Studien. Der dritte Teil beschreibt die Ernährungserziehung und Verpflegung in Kindertageseinrichtungen. Darunter fällt zum Beispiel die Organisation der Mahlzeiten, Verpflegungssystem, Zahnhygiene, Zusammenarbeit mit den Eltern und Nahrungsmittelzubereitung mit Kindern. Dabei wird, wenn möglich auf quantitativ-empirische Studien zurück gegriffen, um die tatsächliche Situation in den Kindertageseinrichtungen zu skizzieren.
