Ce livre porte sur la culture alimentaire byzantine, sa constitution et la maniere dont elle se differencie des cultures alimentaires juive, musulmane et chretienne occidentale. Il se penche sur ses sources d'inspiration puisqu'elle opere une synthese entre les exigences religieuses du christianisme et les recommandations dietetiques de la medecine grecque. Le choix des aliments, la preparation de la nourriture, comme sa consommation lors de repas, obeissent a des regles qui changent a travers le temps; or, durant les onze siecles de son existence, le monde byzantin a connu de profonds changements religieux, culturels et politiques. Il est entre en contact avec des populations ayant leurs propres traditions culinaires ou leurs interdits alimentaires et il a donc ete soumis a des influences diverses. La culture alimentaire byzantine nait d'une rencontre entre les traditions culinaires du monde romain, les habitudes alimentaires des differentes populations du monde mediterraneen et les nouvelles regles de l'ethique alimentaire chretienne, favorisant la frugalite, voire l'ascese en matiere d'alimentation. Le christianisme byzantin modifie les habitudes alimentaires, non pas a la maniere de l'islam ou du judaisme en etablissant une liste d'aliments et de boissons interdits, conduisant a une modification des productions agricoles, mais en creant une ethique alimentaire chretienne dans laquelle le jeune tient une place preponderante. Le livre etudie la mise en place d'un calendrier du jeune, faisant alterner des periodes festives et des periodes de restrictions alimentaires. Le milieu monastique fait naitre un regime ascetique rigoureux qui doit faciliter la maitrise du corps, dans la recherche d'une proximite spirituelle avec Dieu, egale a celle des anges. La creation d'un regime alimentaire ascetique par les moines a une forte influence sur le reste de la societe byzantine, parce que la vie monastique y est percue comme la voie royale pour entrer au Paradis. La societe byzantine medievale suit une version adoucie, plus moderee de cette ascese alimentaire, qui est toutefois devenue une norme du comportement chretien, rejetant le gourmand et, encore plus, le glouton parmi les pecheurs. Ce livre analyse la maniere dont la religion s'est inseree dans l'alimentation en benissant ou en sacralisant certains aliments, par exemple dans le rituel eucharistique. Histoire religieuse et histoire sociale se combinent donc dans ce travail pour essayer de comprendre comment s'est elaboree cette culture alimentaire byzantine que les etrangers de passage percoivent comme differents de la leur au Moyen Age et dont les Byzantins eux-memes ont conscience quand ils critiquent leurs voisins, en particulier les Latins.
