De ser considerado uno de los alimentos básicos para la salud humana y objeto de guerras, monopolios, impuestos y base de la economía (los países más ricos eran aquellos que albergaban salinas), ahora es un elemento a excluir, en ocasiones bajo normas sanitarias que solamente demuestran al criterio erróneo de sus dirigentes. Ya nadie se acuerda de aquellas épocas en que los soldados partían a la guerra con su ración de sal, ni de esas leyes que permitían privar a los presos de todo... salvo de agua y sal. La sal común se convirtió en la antigüedad en un lujo, ocasionando su carencia grandes éxodos y guerras, atrayendo invasores y diezmando la salud de la población que no tenía acceso a ella. Se puede decir, que los pueblos eran ricos o pobres en función de la sal disponible. Obviamente, este libro no pretende ser una loa al consumo de sal, sino que recomienda un uso racional de la sal en la cocina, bien sea mediante sales naturales, especias o mezclas sabias de hierbas y condimentos. Con ellas, amigo lector, habrá conseguido las dos cosas que pretendía: disminuir la cantidad de sal en sus alimentos, y mejorar incluso su sabor. Aunque ahora, en el siglo XXI, las dietas se elaboran con una menor cantidad de sal, especialmente en los alimentos precocinados, congelados y pasteurizados, en su cocina lo importante es adecuar sus gustos a las recomendaciones de su médico. Desde ahora, dispondrá de una gran cantidad de recetas de fácil elaboración, pero ya no las tendrá que comer insípidas y con un mediocre sabor que le haga detestar el momento de comer. Lo que debe saber, antes de ponerse a preparar estas exquisitas recetas, es que la sal es imprescindible en nuestra alimentación y no resulta recomendable suprimirla en su totalidad, ya que es necesaria para la vida. La sal que usted consume habitualmente es sal marina purificada, incluso extraída de las minas, pero que a causa de un proceso industrial se transforma en cloruro sódico casi puro, algo poco recomendable para la salud. El sodio -y debo advertir de que no estoy hablando de la sal común- contribuye al proceso digestivo manteniendo una presión osmótica adecuada, fomenta la producción del ácido clorhídrico y en colaboración con el potasio regula los líquidos de las células. Impide la salida excesiva de los líquidos corporales, manteniendo la excreción renal en unos niveles óptimos y con su presencia en el interior de la célula colabora en la transmisión del impulso nervioso, siendo esencial para el óptimo desempeño del cerebro. Igualmente se sabe que su ausencia genera debilidad, pérdida de peso y calambres musculares.No menos importante es el uso de las especias culinarias en la alimentación, aunque a diferencia de la sal no cambian el sabor, sino que potencian las cualidades organolépticas de los alimentos (color, sabor y olor), contribuyendo de manera intensa y eficaz a que resulte más sabroso y digestivo. El valor de una especia, por tanto, no está en dar sabor y olor a algo que no lo tiene, sino en evitar que se pierda por el proceso de cocinado o manipulación. Con ellas, evitará tener que mezclar muchos alimentos para lograr una adecuada mezcla de color y sabor, consiguiendo una comida más saludable, pues la mayoría de las especias poseen importante efectos medicinales.
