Traditionen und Handwerk spielen nur noch in den wenigsten Bereichen eine nennenswerte Rolle. Allerdings beginnt sich langsam ein Umdenken abzuzeichnen. Laut Konsumforschung legen immer mehr Konsumenten Wert auf Qualität und sind auch bereit dafür zu zahlen: Qualität statt Quantität ist das neue Motto. Diese Rückbesinnung kann als Folge des gehobenen Lebensstandards gesehen werden, der unsere heutige Gesellschaft zu großen Teilen prägt. Traditionelles Handwerk steht für Originalität und Qualität. Ein Paradebeispiel für ein solches Traditionsprodukt ist Parmesan - oder korrekter Parmigiano Reggiano. Der Extra-Hartkäse aus der italienischen Po-Ebene wird bis heute nach traditioneller Art, rein handwerklich produziert. Trotzdem ist er, wie man vermuten möchte, kein Nischenprodukt; Parmigiano Reggiano isst man auf der ganzen Welt. Wie ein so traditionelles Produktionssystem in der heutigen Zeit nicht nur überleben, sondern erfolgreich funktionieren kann, soll in dieser Arbeit untersucht werden. Dafür wird zunächst die Geschichte des Parmigiano Reggiano dargestellt.
