Several generations of Cubans welcomed Nitza Villapol into their homes through her television program, Cocina al minuto (Quick Cooking), which was on the air for more than 40 years. Thanks to her books, those delicious recipes have spread across the island and beyond. Now, in these pages, Nitza's legacy crosses other borders and arrives in Hispanic homes across the US.

Quick Cooking contains hundreds of recipes to prepare grains like rice and corn; soups--some with multiple variations--; beef, poultry, and fish including the traditional ropa vieja and picadillo; and salads and condiments. It also contains dozens of recipes for preparing vegetables, sauces, and delicious desserts.

Sisi Colomina, Nitza Villapol's heir, has not only compiled the recipes, she also transmits the lessons of this master cook, who tells us the origins of various dishes and their nutritional value, along with advice for preparing and serving them.

About the Author: Nitza Villapol (Nueva York, 1923 - La Habana, 1998) fue durante 44 años directora, escritora, locutora y conductora del programa, Cocina al minuto, de la televisión cubana, y publicó varios libros de recetas bajo el mismo nombre.

Maestra de Economía, Arte y Ciencias Domésticas de la Escuela del Hogar y doctora en Pedagogía por la Universidad de La Habana, su obra en general es el resultado de estudios científicos, avalados por cursos y posgrados sobre Dietética y Nutrición en Cuba, Inglaterra y Nigeria.

A lo largo de su vida, Nitza publicó miles de recetas de cocina y escritos sobre nutrición, hábitos culinarios y consejos generales en libros, periódicos y revistas como Bohemia, donde mantuvo una sección semanal desde 1960 hasta su muerte.

Sisi Colomina González (La Habana, 1966) es Licenciada en Historia del Arte. Desde el 2002 comenzó su trabajo de estudio e investigación sobre la vida y obra de Nitza Villapol, de cuyo legado ha realizado varias compilaciones. En abril de 2003 contrajo matrimonio con Marcos E. López González, heredero universal del patrimonio de Nitza Villapol y fallecido en 2016. Actualmente, Sisi Colomina ocupa el cargo de presidente de la empresa Nitza Villapol Inc. y vive en Florida, Estados Unidos.

ENGLISH BIOGRAPHY

For 44 years, Nitza Villapol (New York, 1923 - Havana, 1998) was director, writer, host, and presenter of the program Cocina al minuto (Cooking in a Minute) on Cuban television, and she published several cookbooks of the same name.

A teacher of Economics, Art, and Domestic Sciences and a doctor in Pedagogy by the University of Havana, her work is a result of scientific studies, backed by courses and graduate studies in dietetics and nutrition in Cuba, England, and Nigeria.

Throughout her life, Nitza published thousands of recipes and writings about nutrition, culinary habits, and general advice in books, newspapers, and magazines like Bohemia, where she published a weekly section from 1960 until her death.

Sisi Colomina González (Havana, 1966 - ) has a degree in Art History. In 2002 she began her research and study about the life and work of Nitza Villapol, about whose legacy she has completed several compilations. In April of 2003, she married Marcos E. López González, Nitza Villapol's sole heir, who passed away in 2016. Currently, Sisi Colomina holds the position of president of Nitza Villapol, Inc., and lives in Florida.
