Es setzt Grundkenntnisse in der Chemie und Verfahrenstechnik voraus und umfasst die Lebensmittelkunde und -verfahrenstechnik, wie sie als Vorlesung f?r Ingenieure, Wirtschaftsingenieure und Lebensmittelchemiker als Haupt- oder Nebenfach angeboten wird.

About the Author: Heike P. Schuchmann geb. 1965 in Bruchsal, studierte Chemieingenieurwesen an der Universit't Karlsruhe (TH) mit der Vertiefungsrichtung Lebensmittelverfahrenstechnik und promovierte im gleichen Fachgebiet. Von 1994 bis 1997 war sie bei der BASF AG im Bereich der Prozessentwicklung in den Gebieten Emulgieren, Zerkleinern, Agglomerieren und Mischen t?tig. Bis 2000 leitete sie die Gruppe 'extrusion technologies' am Nestl? Product Technology Center, Orbe, CH. 2001 ?bernahm sie in Nachfolge von Prof. Dr.-Ing. Dr. h. c. Walter E. L. Spie? die Leitung des Institutes f?r Verfahrenstechnik an der heutigen BFEL (Bundesforschungsanstalt f?r Ern?hrung und Lebensmittel), Karlsruhe. Seit 2004 ist sie als Nachfolgerin von Prof. Dr.-Ing. habil. Helmar Schubert Professorin f?r Lebensmittelverfahrenstechnik an der Universit't Karlsruhe (TH) mit den Arbeitsgebieten Disperse Systeme, Extrusion, Steriltechnik sowie alternative Verfahren zur Haltbarmachung von Lebensmitteln.

Harald Schuchmann geb. 1959 in Wiesbaden, studierte Chemieingenieurwesen an der Universit't Karlsruhe (TH) mit den Schwerpunkten Lebensmittel- und Mechanische Verfahrenstechnik. Nach seiner Promotion bei von Prof. Dr.-Ing. habil. Helmar Schubert auf dem Gebiet der Strahlagglomeration von Instantprodukten arbeitete er von 1993 bis 2001 als Gruppenleiter f?r die Firma Nestl? in Deutschland, der Schweiz und Frankreich. Hauptarbeitsgebiete waren die Produkt- und Prozessentwicklung von Getr?nkepulvern (Kaffee, Kakao, Milch, Tee u. ?.). Seit 2001 ist er als selbstst?ndiger Ingenieur beratend vor allem auf dem Gebiet der Prozessauslegung f?r Texturierungsverfahren und in der Weiterbildung (Projektmanagement) t?tig.
