Jules Gouffé (1807-1877) est l'une des grandes figures de la gastronomie, et son influence est encore incontestablement présente aujourd'hui.
Fils de pâtissier, il fait d'abord son apprentissage auprès de son père avant de continuer sa formation avec Antonin Carême, l'inventeur de la gastronomie à la française tant prisée par les cours royales et la haute bourgeoisie au XIXe. Il s'établit pendant quinze ans rue du Faubourg-Saint-Honoré, puis entre au service de Napoléon III comme cuisinier. Il terminera sa carrière en tant qu'officier de bouche au prestigieux Jockey Club.
On ne sera pas étonné de retrouver dans cet ouvrage la rigueur, l'exigence et le savoir-faire qui ont permis à Jules Gouffé d'être reconnu comme l'un des plus grands cuisiniers de sa génération il fait de la préparation et la confection des conserves un art à part entière. Ce sont ainsi plus de cinq cents recettes qui sont décrites dans le détail, et tous les mets sont abordés poissons, viandes, terrines, légumes, fruits, mais aussi bonbons, sorbets, sirops, liqueurs... Les novices comme les plus experts trouveront des conseils indispensables et avisés pour mener à bien leurs réalisations.
L'ouvrage est agrémenté de trente-quatre gravures.
