Sa cuisson presque faite, vous le saupoudez de sucre fin, vous le glacez, vous en videz l'interieur par la partie carree qui forme trou; vous remplissez cet interieur de confitures, et vous servez en entourant, si vous voulez, votre gateau d'un cordon de choux a la creme, attaches ensemble de facon a former la chaine. Gateaux en losange.--Abaissez du feuilletage et coupez-le par bandes dont vous faites ensuite des losanges. Vous les posez sur un plafond ou une feuille d'office, vous les dorez et les mettez au four; leur cuisson faite, glacez-les et servez. Gateau au lard.--Faites une pate brisee tres-fine, dressez un gateau a l'ordinaire, mettez par rangees et fort pres des lardons de petit lard de la hauteur du gateau, egalisez bien le tout, mettez-le cuire au four et servez-le froid.
