De las miles de especies de leguminosas existentes en el mundo, solamente el frijol común (Phaseolus vulgaris) es la especie que más se utiliza en la alimentación humana; sin embargo, existen otras que son poco consumidas por su poco índice de cultivo o bien por contener algunos tipos de anti nutrientes muy específicos. A este último caso corresponde el grano de la Canavalia ensiformis conocida simplemente como Canavalia o Jack bean, que con el tratamiento adecuado pueden ser aptas para consumo humano o bien como ingrediente para utilizar en alimentos para animales. Una alternativa para ser usado el grano de esta leguminosa es a partir de la separación de sus principales componentes en la cual abunda su riqueza: proteína, fibra y almidón; siendo este el propósito del presente trabajo: Desarrollar un proceso para utilizar como materias primas estos componentes mayoritarios del grano de Canavalia.
