Risotto'da Pirinç Neden Bu Kadar Önemli?


Risotto, en temel haliyle et suyunda pişirilen pirinçtir. Pirinç burada yıldızdır çünkü nişasta üretir; pişirme işlemi sırasında sürekli karıştırma, nişastayı pirincin yüzeyinden ovalar ve burada çözünerek pişirme sıvısını koyulaştırır. Yeterli nişastaya sahip olmayan bir pirincin seçilmesi, iyi bir risottoya özgü kremsi dokuya asla ulaşılamayacağı anlamına gelir.


Peki bir risotto pirincini iyi yapan şey nedir? Kısa ila orta taneli, dolgun ve yüksek amilopektin (nişasta) içeriğine sahip pirinç arayın. Bu tür pirinçler aynı zamanda sürekli karıştırmaya da dayanıklıdır; son doku yumuşaktır, ancak her tanenin ortasında hafif bir çiğnenme bulunur.


Risotto Pilav Çeşitleri

D. Cal Riso: Bu orta taneli bir pirinçtir. Pişirildikten sonra hafif yumuşak ve yapışkan hale gelir; bu da onu suşi, çorba veya salata gibi tahılların tutulması gereken yemekler için ideal kılar. Calrose pirinci aynı zamanda çok hafif bir tada sahiptir; bu da şifalı bitkiler ve baharatlar gibi cesur malzemeleri kolaylıkla emebileceği anlamına gelir.
