Specializes in recipe development, food safety, sanitation, & project management. Her experience was gained working in middle & senior management & consulting in public and private long-term care companies. As a legal forensic consultant she specializes in medical nutrition therapy, nutrition, hydration, pressure areas, abuse & neglect. Lifetime teaching credentials, California Community Colleges qualified to teach nutrition, wellness, healthcare management & food production. Provided instruction in food preparation methods, food safety & recipe development to Chef & culinary students, dietary managers & cooks, & supervised & been preceptor to dietetic interns. She is available for workshops & presentations to professionals in English & Spanish. Member of the Academy of Nutrition & Dietetics, the California Dietetic Association, Nutrition Entrepreneurs, Dietetics in Healthcare Communities & Latinos and Hispanics in Dietetics & Nutrition, & serves in volunteer & elected positions. She has published numerous professional articles & blogs & several manuals & books. Digna's free time is spent exploring the high desert in her Jeep Wrangler, enjoying nature, tending to her gardens, vegetable crops, rescued water turtles & can be seen often picking up trash in the desert during her off-road trips.
