Anhand eines umfassenden Überblick über das aktuelle F&B-Angebot von europäischen Fluggesellschaften, einer SWOT-Analyse und einer empirischen Umfrage werden strategische Handlungsempfehlungen für die Branche erarbeitet. Die Erarbeitung wird auf Grundlage der Auswertung von Fachliteratur und bereits publizierten Forschungsarbeiten vorgenommen und durch eine empirische Online-Befragung ergänzt. Verpflegung und Getränke an Bord wurden bereits seit der Pionierzeit der Luftfahrt von Fluggesellschaften angeboten. Die Veränderung der Luftfahrtbranche durch die technischen Weiterentwicklungen, die weltweite Globalisierung und die gesellschaftliche Digitalisierung führt dazu, dass sich Fluggesellschaften immer wieder strategisch auf die neuen Kundenbedürfnisse ausrichten müssen. Dabei spielt auch die ständige Neupositionierung, Stärkung der Innovationsfähigkeit und die Anpassung an neue Trends durch die Luftfahrtunternehmen eine wichtige Rolle, um im harten Preiswettbewerb bestehen zu können. Im Bereich des Food and Beverage-Angebotes (F&B) an Bord befinden sich Fluggesellschaften erst im Anfangsstadium eines kundenorientieren Angebotes, wobei die gesellschaftlichen Ernährungs- und Digitalisierungstrends eine neue, margenstarke Einnahmequelle ermöglichen. Digitale Essenslieferapplikationen bieten bereits heute einen sehr kundenfreundlichen und einfachen Bestell- und Lieferprozess an, welcher sich in Europa großer Beliebtheit erfreut.
