A desemulsificação é a quebra de uma emulsão de petróleo bruto em fases de óleo e água. Do ponto de vista do processo, o produtor de petróleo está interessado em três aspectos da desemulsificação: Taxa ou a velocidade a que esta separação ocorre, Quantidade de água deixada no crude após a separação e Qualidade da água separada para eliminação. Uma taxa de separação rápida, um baixo valor de água residual no petróleo bruto e um baixo valor de óleo na água de eliminação são obviamente desejáveis. O óleo produzido tem geralmente de cumprir as especificações da empresa e do oleoduto. As emulsões dos campos petrolíferos possuem alguma estabilidade cinética. Esta estabilidade resulta da formação de películas interfaciais que encapsulam as gotículas de água. Para separar esta emulsão em óleo e água, a película interfacial deve ser destruída e as gotículas devem coalescer. Por conseguinte, a desestabilização ou a ruptura das emulsões está directamente relacionada com a remoção desta película interfacial. Os factores que aumentam ou aceleram a quebra da emulsão são: Temperatura, Agitação ou cisalhamento, Remoção de sólidos, Tempo de retenção, Controle de agentes emulsificantes e Retrofitting. A desemulsificação, a separação de uma emulsão nas suas fases componentes, é um processo em duas etapas.
