Varför ris är så viktigt i risotto


Risotto, när den är som mest grundläggande, är ris kokt i buljong. Ris är stjärnan här eftersom det producerar stärkelse - den ständiga omrörningen under tillagningsprocessen gnuggar bort stärkelsen från risets yta, där den löses upp i och förtjockar kokvätskan. Att välja ett ris som inte har tillräckligt med stärkelse innebär att den kännetecknande krämiga konsistensen hos en god risotto aldrig kommer att uppnås.

Så vad gör ett bra risottoris? Leta efter ris som är kort- till medelkornigt i storlek, fylligt och har ett högt innehåll av amylopektin (stärkelse). Dessa typer av ris håller också bra vid konstant omrörning - den slutliga konsistensen är mjuk, men har en liten tugga i mitten av varje korn.

Typer av risottoris


A. Carnaroli: Kallas "kungen" eller "kaviar" av risottoris, kockar gillar att använda denna för dess fantastiska smak och för att varje korn behåller sin form. Den ger också den krämigaste risotton och är mer förlåtande att laga mat med.

B. Arborio: Denna variant av ris är inte lika stärkelsehaltig som carnaroli, men det är den mest tillgängliga. Detta medelkorniga ris kan vara lätt att överkoka eller göra mosigt,

men med noggrann uppmärksamhet kan det fortfarande göra en fantastisk risotto.

C. Vialone Nano: Thans kortkorniga ris odlas i Veneto-regionen i Italien och kan inte odlas med kemikalier. Den har en hög stärkelsehalt, kokar upp snabbare än carnaroli och ger mycket krämig risotto.

D. Baldo: Baldo-ris är ett fylligt, malet, kortkornigt ris som odlas i Turkiet. Kornen är stärkelsehaltiga och kan absorbera mycket fukt, gör den väldigt krämig och mör och håller formen bra när den tillagas. Baldo-ris är ett utmärkt val för risotto, paella och turkiska pilaffer.

E. Cal riso: Detta är ett medelkornigt ris. När den är tillagad blir den något mjuk och klibbig, vilket gör den idealisk för rätter där spannmålen behöver hålla sig, som sushi, soppor eller sallader. Calrose ris har också en mycket mild smak, vilket innebär att det lätt kan absorbera alla djärva ingredienser, såsom örter och kryddor.

F. Maratelli: Maratelliris är en sort som valdes naturligt från Asigliano Vercellese åkrarna i nordvästra Italien. Det är en tidigmognad sort och ingår i gruppen "halvfint" ris.
