Inhaltsangabe: Problemstellung: Das Zentrale Problem ist der Gesundheitsstatus der Kinder. Ein Artikel aus der Bonner Rundschau im Sommer 2003 schreibt: „Jedes fünfte Kind und jeder dritte Jugendliche in Deutschland sind zu dick". Solche und ähnliche Schlagzeilen finden sich heute in jedem Gesundheitsmagazin. Es wird über die Gründe des vielschichtigen Problems parliert und diskutiert. Übergewicht ist aber nur eine Erkrankung, die sich auf falsches Essverhalten zurückführen lässt. Im Laufe der Arbeit kommen noch weitere ernährungsbedingte Erkrankungen kurz zur Sprache. Fakt ist, dass diese Krankheitsbilder dem heutigen Ernährungsverhalten, hier als das gewohnheitsmäßige Essen und Trinken verstanden, zu Grunde liegen, die die gesellschaftlichen Rahmenbedingungen widerspiegeln, unter denen die Kinder aufgewachsen sind. Die Schlagwörter lauten: Quantität statt Qualität, Eile statt Genuss. Bundesverbraucherministerin Renate Künast will vor allem dem Übergewicht der Jugend zu Leibe rücken. Auf dem Kongress „Kinder und Ernährung" in Berlin sagt die Ministerin: „Wir brauchen eine neue Esskultur, das heißt aber nicht weniger Genuss". In der modernen Gesellschaft steht als der zentrale Vermittler dieser neuen Esskultur die Schule. Die Schule nimmt damit einen hohen Stellenwert in der Ernährungserziehung ein. Vor allem die Grundschule, speziell der Sachunterricht, ist zu einem Ort der primärpräventiven Gesundheitsförderung mit Familien ergänzender Bedeutung geworden. Der Ernährungsunterricht unterscheidet sich aber von vielen anderen Unterrichtsthemen dadurch, dass nicht in erster Linie Wissen vermittelt, sondern das Verhalten beeinflusst werden soll. Die Schülerinnen und Schüler sollen dazu befähigt und motiviert werden, sich gesünder zu ernähren. Für die Schule (Grundschule) ist deshalb eine Reihe von Unterrichtsangeboten für die Gesundheitserziehung, speziell Ernährungserziehung, entwickelt und veröffentlich worden, die das Verhalten der Schülerinnen und Schüler positiv
