L'oggetto della Tesi che andrò a trattare è strettamente legato alla Tesi di Laurea Magistrale "Opening a Wine Pub in Ireland: a cultural challenge in the realm of beer" redatta dal sottoscritto. In particolare, dato che la Tesi magistrale tratta l'apertura di un Wine Pub in Irlanda, ciò che più mi interessa è sviluppare una parte mancante nella predetta Tesi che prenda in considerazione tutti gli aspetti del vino. Nella Tesi magistrale precedente avevo esaminato i dati statistici riguardanti il consumo di vino nel mondo, individuando quali sono i maggiori Stati importatori. Inoltre, ho analizzato le esportazioni italiane, in particolare, ho confrontato le varie regioni italiane per produzione ed esportazione. Tale analisi, però, essendo puramente statistico-economica, non prende in considerazione altri aspetti più tecnici riguardanti la produzione del vino a partire dalla coltivazione della vite. Elementi che ritengo sempre più importanti da conoscere per chiunque voglia entrare nel settore enologico. Quindi, l'obiettivo di questa Tesi del Master è proprio quello di studiare in maniera approfondita, aiutandomi con un manuale di testo "Il libro completo del vino" di Giuseppe Sicheri, le diverse fasi di lavorazione del vino. Questo studio mi permette di famigliarizzare con la terminologia tecnica dell'enologia nella speranza di diventare da semplice appassionato ad esperto del settore.La presente Tesi comincia con una descrizione della coltivazione della vite (paragrafo 2) per poi analizzarne i grappoli d'uva (paragrafo 3). Dopodiché, sono descritti tutti i processi di lavorazione all'interno di una cantina (paragrafo 4), dalla pigiatura dell'uva da cui si ricava il mosto (paragrafo 5) alla sua fermentazione (paragrafo 6). Inoltre, vi sono spiegate tutte le tecniche per affinare il vino (paragrafo 7) prima dell'imbottigliamento (paragrafo 8). Successivamente, vi è una classificazione dei vari tipi di vino (paragrafo 9) con una spiegazione delle indicazioni da riportare in etichetta (paragrafo 10). Infine, la Tesi si conclude con un'illustrazione delle tecniche di assaggio del vino (paragrafo 11) per poter apprezzare meglio le sue caratteristiche organolettiche, comprenderne i benefici per la salute (paragrafo 12), le modalità per servirlo ai clienti (paragrafo 13) e gli abbinamenti (paragrafo 14) adatti per ogni tipo di alimento.
