xv W ohl wurden inzwischen groBe FOl'tschritte gemacht: die Riibensaft- bestandteile wurden eingehend studiert, ihr Verhalten im Betriebe zum 'feile erkannt, die analytischen Methoden ausgebaut, manche Prozesse des Betriebes erfuhren ihre Deutung, neue Arbeitsweisen wurden auf Grund theoretischer Erkenntnisse eingefiih1: t usw. Wieviel aber noch zu tun ist, um von einem vollen Erfolge sprechen zu konnen, lehren die W orte Strohmers bei der Tagung der osterreichisch-ungarischen Zucker- industrie in Salzburg im Jahre 1911: "Sind uns doch heute noch nicht einmal aIle Bestandteile unseres Rohmaterials, d. i. der Riibe, bekannt und der Wechsel ihrer Mengenverhaltnisse in der Abhangigkeit von Witterungsverlauf und KulturmaBnahmen. Ebenso haben die Vor- gange der Saftreinigung nicht ihre vollstandige Klarlegung gefunden, wie auch die chemischen Prozesse bei der Verdampfung noch der Auf- klarung bediirfen. Die Abhangigkeit der Krystallisationserscheinungen von den Nichtzuckerverhaltnissen ist ebenfalls noch nicht genau er- kannt, wie auch die Frage der Melassebildung noch nicht ihre definitive Losung gefunden hat. Ich bin iiberhaupt der Meinung, daB die Zucker- fabrikation so lange nicht ihre vollstandige technische Ausbildung er- reicht hat, solange sie noch ein Abfallsprodukt wie die Melasse erzeugt, das nahezu zur Halfte noch aus jenem Stoffe besteht, del' eigentlich gewonnen werden soIl" - was auch heute noch gilt. . Trotz diesel' pessimistiscben Worte sind wir in unseren Kenntnissen doch viel weiter fortgeschritten und wir wissen heute von del' Chemie del' Zuckerindustrie mehr, als man zu Scheiblers Zeiten wuBte.
