Im Morgengrauen wird das Brot aus den Backereien seit dem Mittelalter uber die ganze Stadt verteilt. Brot und Stadt beleuchtet die Geschichte des Hauptnahrungsmittels Brot, seiner Herstellung und seines Konsums. Im Zentrum stehen die zahlreichen Veranderungen, die innerhalb des Gewerbes stattfanden: War es fruher die Zunft zu Brotbecken, die in enger Verbindung mit den Stadtbehorden das Funktionieren des Brotmarktes organisierte, steht an deren Stelle heute der Berufsverband. Als Mitte des 19. Jahrhunderts die Basler Stadtbevolkerung in kurzer Zeit um mehr als das doppelte zunahm, wurde Brot als Hauptnahrungsmittel in grossen Mengen und zu gunstigen Preisen benotigt: Technische Innovationen wie Knetmaschinen und elektrische Ofen fanden Eingang in die Backstuben und veranderten die Arbeit. Gewandelt haben sich auch die Ernahrungsmuster und mit ihnen der Stellenwert des Brots in der taglichen Ernahrung: Die entbehrungsreichen Jahre des Zweiten Weltkrieges wurden in den 1960er Jahren durch die Entgrenzung des Konsums abgelost: Das Brot busste innerhalb der Masse neuer und verlockender Nahrungsmitteln an Bedeutung ein. Die Inhaber von Backereien mussten sich den neuen Marktverhaltnissen anpassen, ihr Angebot erweitern oder nach einer Nische suchen. In weniger als einem halben Jahrhundert sank die Zahl der Backereien bis heute um mehr als die Halfte. Noch heute funktionieren die meisten kleinen Backereien in Basel als Familienbetriebe, deren Leitung dem Backermeisterpaar obliegt. Wahrend die Manner sowohl in der Zunft als auch im Verein ihre Anliegen vertraten, grundeten die Basler Backermeistersfrauen erst 1944 ihren eigenen Verein. Innerhalb der Backereien waren sie jedoch immer prasent und zeitweise - zum Beispiel wahrend des Zweiten Weltkrieges - fuhrten sie nebst Laden auch die Backstube ohne ihre Ehemanner weiter. Brot und Stadt vermittelt Einblicke in Backstuben und Laden, in den Arbeitsalltag und die Lebenswelten von Lehrlingen, Angestellten, Backermeistern und Backermeistersfrauen zu verschiedenen Zeiten in Basel. Das Buch erschien aus Anlass des 750-Jahr-Jubilaums der Basler Zunft zu Brotbecken und des 120-Jahr-Jubilaums der Basler Begge.
