Eliane Pereira CipolattiEliane Cipolatti is a Food Engineer and has a PhD from the Federal University of Santa Catarina, Brazil. Part of her thesis was developed at the Consejo Superior de Investigaciones Científicas in Madrid (Spain). She is currently a Professor at the Feeral Rural University of Rio de Janeiro. She has experience in the area of food science and technology, enzyme technology, mainly lipases, and bioprocesses, acting in the production of enzymes by solid and submerged culture, immobilization of enzymes, production of bioactive esters and study of antioxidant activity of carotenoids and phenolics compounds.
